Bubbelini is made in collaboration with the award winning Blue Pyrenees Estate. A blend of 87% Chardonnay and 11% Pinot Noir with maturation for 54 months on lees. Pours with a creamy white mousse which dissipates to reveal a pale salmon base wine colour. Very profuse fine bead. Fragrant winter strawberry and ripe cherry aromas dominate the nose with bready yeast lees, toast and light sherbert notes also apparent. The palate has a leanish mourthfeel and is relatively simple in terms of its complexity with flavours of red cherries and peach merging into some yeast lees, faint toast and sherbet characters. Very dry finish with crisp acidity, Aftertaste of yeast lees, red cherries, peaches, subtle sherbet and toast.
